Form is key- Leg day!

Do you record your form when you workout? Anytime I am sore or upping my weights, I like to check my form.

I have been fighting mis-alignment in a few places for years.  Chronic neck and back issues for 20+ years hasn’t helped either.   But I also know how important it is to maintain muscle function as I grow older.  So weight lifting I go!  My increased core and back strength over the last couple of years since I started lifting has helped me tremendously with my back issues.

I upped my sumo squat to 40lbs!   A weight that I hadn’t touched since this spring.  Squats with 20’s, deadlifts with 30’s and side lunges with 20’s.  Going to need a wheelchair tomorrow but love the progress I have seen in three short weeks!

Don’t Touch Mama’s Cookie Dough

It would often be my “cheat day” treat. But why cheat when you can be healthier AND enjoy a treat?

Mama’s Cookie Dough

🍪 2 scoops Vanilla Shakeology (Regular or Vegan)

🍪 1/2 Cup Almond Butter

(or any natural – no added sugar – nut butter)

🍪 1/4 Cup of honey

🍪 1/2 tsp Vanilla

🍪 1/4 Cup Chocolate Chips (I use Ghirardelli 60% Cacao Chips)

Stir, scoop and refrigerate for 30 minutes.

(If I had to tell you the band name…I don’t know if we can be…ahhh I just need some time…it’s ok…we will get thru this) 🤣
The best transformation stories are the ones where the person is caring enough to pay it forward to others.  I had the absolute pleasure of meeting Brent last winter and I can honestly say he is so humble and kind.   Brent has battled with alcohol and drug addiction.  But he turned his life and health around for himself, his family and his fans.   Brent lost 70 lbs with Insanity!   In turn, he inspires our Shinedown Nation family to be their best version of themselves with his words and music.

I fell in love with Shinedown around the same time that I became a Shaun T fan as well.  Like Brent, I got hooked on a late night infomercial on a T25 and thought…”Hey I can do that!”  I love how the band does the workouts together and their work has definitely paid off!

Super Easy Meal Prep Chicken Enchiladas!

I hate cooking…
I hate doing dishes…
But I love food!

So that is how this chicken enchilada recipe came to be.

Ingredients

4 lbs of boneless skinless chicken breast
10 Whole Wheat Shells (Try to avoid enriched flour)
1 1/2 cups diced onion
1 cup fresh salsa (Try to avoid added sugar)
1 can (28 oz) of diced tomatoes, (no salt added) – Do not drain
1 cup greek yogurt ( I prefer Oikos Triple Zero Vanilla)
2 tsp EVOO (Extra Virgin Olive Oil)
3 1/3 cup shredded Monterrey jack cheese (low fat if possible)
2 tsp sea salt

Directions:

  1. Preheat oven to 400 degrees.
  2. Place chicken breast in 9X13 dish.
  3. Bake in preheated oven for 25 minutes or until chicken reaches 165 degrees.
  4. While the chicken is baking, start on the sauce.
  5. In a large saucepan over medium heat, add EVOO and diced onion.
  6. Stir occasionally and let simmer around 4-6 minutes until onions are translucent.
  7. Add diced tomatoes to the pan and cover.  Simmer on low for 10-15 minutes.
  8. Spray pan(s) with cooking spray.
    (I use 2 – 5X8 pans and 1 – 8X8 pan.  This gives me two pans of three enchiladas to freeze and one pan of 4 enchiladas for dinner)
  9. Once the chicken is done baking, reduce the oven to 350 degrees.
  10. Let the chicken cool until you are able to shred it.  (I prefer to use my Ninja blender with cookie dough blade to do shredding.)
  11. Scoop one red container (3/4 cup) of shredded chicken per shell.  Roll chicken inside shell and place in pan.
  12. Back to the tomatoes and onions, add the Greek yogurt, salsa and salt.
  13. Stir until mixed well and let simmer a few minutes.
  14. Let sauce cool enough to put in a blender.   Blend until desired consistency (chunky or smooth)
  15. Pour sauce over enchiladas.  Should be about 1/2 cup for each enchilada.
  16. Using a blue container (1/3 cup) to measure, sprinkle cheese over enchiladas.
  17. 1/2 blue container per enchilada in the pan.  (So four enchiladas in the pan would be two blue containers)
  18. Any pans that you are cooking, place in oven for 15-20 minutes.  Let cool and enjoy!
  19. Any pans that you are freezing, let them cool until you can put them in the freezer.  You may cook them from frozen (until internal temp is 165) or let them thaw and cook for 20-25 minutes.

First Insanity Live Class!

Have you ever stepped soooo far out of your comfort zone that you forgot how to get back? 😜

would WANT to stand (squat, lunge, etc) in front of a room of people, teach a workout and drip sweat.

I ABSOLUTELY LOVED every minute of teaching my first Insanity Live class. Teaching was something I wanted to do for a long time…but those thoughts would creep in:

“Maybe when get stronger”
But now

…and I decide what is “me”.
